Bolognese Mushrooms

Step1

Blend tomatoes with coriander leaves, set aside.

Step2

Soak the soy mince mix in warm water for 5 minutes, remove excess water and temper with the flavour pack until golden.

Step3

Add the garlic to a pan over low heat, cook till golden then add all the vegetables except the mushrooms and cook over a medium heat for 10 12 minutes, until vegetables are soft

Step4

Add the mushrooms and wine, cook for 2 minutes, add thyme and tomato blend and simmer until it re- duces by half

Step5

Add soy mince mix and sugar, cook for 2-3 minutes. Add lemon juice and basil after heat is turned off.

Step6

Serve over spaghetti with a basil garnish.
